1. What does it mean to grate the zucchini and squeeze out excess liquid. Do I shred the zucchini? Can I use a food processor? What is it supposed to look like once it is grated?

Yes, you can use ther food processor. I’m sure you can also use the grater in the food processor.
Remember to squeeze out excess liquid.
